BLACK BEAN CAKES (OR BURGERS)

2 cups cooked or canned black beans

1 cup sweet potato, peeled and cut in pieces and boiled and mashed

1/2 cup red onion, diced

½ cup black olives, diced

¼ cup whole spelt flour or other flour

2 tablespoons tamari (this is wheat free soy sauce)

3 cloves garlic, diced

1 tablespoon fresh ginger, grated

1 egg lightly beaten.

Drain and rinse the black beans, put in a bowl and mash and then stir in the rest of the ingredients.

Form the mixture into burgers.   Fry over a medium heat for 7 – 10 mts on one side, then flip over and fry an additional 5 minutes on the other side, or until they are cooked through.  If browning too quickly, turn heat down a bit to allow to cook more slowly.

These are many ways in which these could be served, but they a great with a salsa like Mango Salsa:

2 ripe mangoes

½ jalapeno chilli pepper

1 small red onion

1 tablesppon lime juice

10 sprigs coriander.

Dice all ingredients, mix in a bowl and serve over the bean cakes.
