Here is a quick and easy soup which tastes really great! It tastes really creamy, even without adding any cream.

1 lb  courgettes (prepared weight) – 3 fair sized ones

2 medium onions

2 garlic cloves

2 oz butter, or tablespoon olive oil

1 oz plain flour

1 pint vegetable stock

½ pint milk

salt and freshly ground black pepper

1 tablespoon chopped parsley

1 teasp chopped oregano or marjoram

Optional: added light cream.

You can leave out milk and use 1and1/2 pints stock, or use a substitute for milk such as soya or coconut milk.  Look out for cartons of milk made from coconuts.

Wash and dry the courgettes, trimming the tough ends.  Cut into ½ inch slices.  Peel and finely chop and onions and garlic.  Heat the butter, add the onions and garlic and cook gently for 5 mts. Add the courgettes and cook a further 5 mts. Stir in the flour and mix thoroughly.

Add the stock and bring just to the boil.  Cover and simmer for 15 mts.  Sieve or liquidize the soup.  Return to pan, add the milk, seasoning, herbs and cream, then heat and serve.
