Hot drinks

Between the cold weather and the Christmas season, I am thinking of food and drink a lot these days.  For me it is good to make up a hot drink from spices and herbs rather than a tea-bag, so I am giving you a couple of recipes I like.

MULLED APPLE JUICE (enough for four)

Apple juice is the easiest fruit juice to digest. If you are making your own juice, choose firm apples with a strong flavour and simmer them gently, unskinned and cut in quarters, before sieving.

900 ml (1 1/2 pints) apple juice

6 cloves

1 small cinnamon stick

1/4 teaspoon allspice

1/2 oz. brown sugar

Mix ingredients in pan and simmer gently for 5 minutes. Leave to cool for an hour or so. Reheat carefully and strain. Serve in mugs or strong glasses. 



Ingredients for one.

2 teaspoons crushed or ground fennel seed

600 ml (1 pint) boiling water.

Crush seed with a teaspoon and put in warmed teapot.  Pour on boiled water, cover pot with tea cosy and leave to infuse for ten minutes.  Strain and serve a little at a time.

This eases indigestion and gets rid of wind.
