Ingredients for 4:
1 pink grapefruit
1 bunch of watercress
mixed, fresh, new and young, green leaves of choice, such as spinach, rocket, dandelion, nettles
2 tablespoons coarsely chopped walnuts
Dressing:
2 tablespoons lemon juice
2 teaspoons honey
2 teaspoons mustard
1 tablespoon extra virgin olive oil
salt and pepper to taste.
To make:
1. Peel grapefruit and separate out each section. Remove the membrane if you have time, otherwise leave the sections
2. Prepare the green leaves by tearing into pieces, washing and spinning dry in a salad spinner or with clean tea towel over the strainer and giving several good shakes.
3. Mix the dressing ingredients together, toss with the salad greens and grapefruit sections and chopped walnuts on top.
