Tofu, Olive and Chilli Sausages

Ingredients:

85g/3oz pitted black olives

3 cloves garlic, roughly chopped

1 large spring onion (scallion),  roughly chopped

17g/6oz firm tofu, grated or mashed with fork

2 red chillies, finely chopped (or to taste)

1/2 teaspoon dried oregano

salt and pepper

30 – 55g/1-2 oz fresh breadcrumbs

a little beaten egg

flour for dredging

oil for frying

Method:

Whizz the olives, garlic and spring onion (scallion) in food processor until olives are minced.  Tip this into a bowl, add the tofu, chillies, seasoning and enough breadcrumbs and beaten egg to bind the mixture.  At this stage you can chill in fridge so that the sausages can better hold their shape, but you can also go ahead with shaping into 8 sausages and carefully roll them in some flour.  Fry them in a little oil, turning regularly till browned all over.

Serve with just about anything! Mashed potato and green vegetable is good.
